Swedish sticky cake (Kladdkaka)
This is the recipe for an easy, sticky, yummy and smart chocolate cake, because you mix all the ingredients directly in the saucepan.
Ingredients:
100 g/3,5 oz butter
2 1/2 dl/9 fl. oz sugar
2 eggs
1 1/2 dl/6 fl.oz flour
3 tablespoons cocoa
1 teaspoon vanillasugar
Preaheat oven to 175 degrees C/350 degrees F. Melt the butter in a saucepan, take off the plate. Add sugar and eggs and mix well with the electric mixer. Add all other ingredients and mix well. Butter a form with detachable bottom (Sprin gform) and cover with breadcrumbs. Bake for 20 min in the middle of the oven. The cake is perfect when low with a crusty surface and a little sticky in the middle. Let cool off and cover with powder sugar.
Serve with whipped cream, vanilla icecream and/or raspberries.

Key lime pie
Ingredients:
16 digestive crackers
100 g/3,5 oz butter
3 tablespoons sugar
ca 4-5 limes
4 egg yolks
1 can (14 fl. oz) sweetened condensed milk
Preheat oven to 175 degrees C/350 degrees F. Put the crackers in a plastic bag and crush them into crumbles. Melt butter and mix with sugar and crumbles in a bowl. Press mixture into a pieform and bake for 12 minutes.
Grate peel of 2 limes until you get about two teaspoons of peel. Juice all limes. Beat eggyolkes until fluffy, add condensed milk, juice and grated peel. Don’t overmix. Pour mixture onto piebottom and bake for 12 more minutes at the same temperature. Let cool off and serve with whipped cream, ice cream or a fruit sallad made of pineapple and strawberries with a bit of rum (my personal favourite!). If you want to use up the left over egg whites make a meringue with some sugar and cover the cake with it. I personally find that a bit on the sweet side though.

Easy peasy Rhubarb crumble 
Ingredients:
1 l rhubarb
3 dl flour
2 teaspoons baking powder
1,5 dl sugar
150 g butter
Preheat oven to 200 degrees C. Peel rhubarb and cut into 5 cm thick pieces. Mix flour, sugar, baking powder and add the melted butter. Mix all to a crumbly dough. Put rhubarb into a greased glass pan and crumble dough over it. Bake for 20 min. Ready to be served with vanilla sauce or ice cream.
